From 30 to 40 year old vines planted on clay and limestone soils. The grapes were harvested and macerated in whole bunches for just two days before being pressed off to stainless steel tank, bottled with a few grams of sugar left, pet nat style. Christophe chose not to disgorge the wine which is a wonderful cloudy peach colour. Plenty of stone fruit follows through on the palate with a nice rolling bubble. Perfect summer drinking.
