Chardonnay grown by us at the Finyard in Dixons Creek, on Wurundjeri Country. Grown thoughtfully and sustainably without use of herbicides, chemical fertilsers and pesticides. Handpicked then pressed directly into our favourite tank Elton, a tall thin stainless steel tank resembling a rocket. Elton kept the wine tight and fresh, whilst limiting contact with the ferment lees it sat on. Bright and frisky. Grapefruit zest, cashew nut, crisp lingering acidity with a touch of oyster shell.
