It's the third incarnation of an experiment by one of the best experimenters in cider - Mr Tom Oliver and beer - Jonny P Mills. They first got together in 2015 and brewed a beer/cider hybrid involving the wort being fermented for eight months in old cider barrels with the residual lees from a previous cider fermentation. Made using the turbid mash method in the style of traditional Lambic producers. The wort (unfermented beer))was fermented with Foxwhelp juice and cider lees ( active cider yeast) in old oak barrels for 17 months. A true union of traditional Cider making and beer brewing techniques
