Born in 1998, Portland, OR based Cascade Brewing is one of the Pacific North West's oldest sour beer purveyors. These guys were pioneering American sours at the time of the 'hops arms race' of the 2000s - focusing on a sensory exploration of beer as opposed to pure bitterness. More than two decades on, they have definitely achieved their aims by exploring kettle souring techniques alongside regular barrel-ageing.
