Edgar: an oak barrel-aged farmhouse ale, laced with Sauvignon Blanc-derived Phantasm thiol-enrichment powder, and fermented with a unique blend of Wild Workshop and Sapwood Cellars’ own house cultures. Phantasm is a patented product that came from the brain of one of our founders, Jos Ruffell. The nearby Marlborough region is famous for producing exceptionally high-quality Sauvignon Blancs known for their intense tropical fruit aromas. Jos started researching what makes the wines so vibrant, and wondered how we might capture that for beer. Enter Phantasm: it’s a powder extract from grape skins that are usually a waste by-product of the wine-making process, and it can be used in brewing to introduce high levels of thiol precursors. When added to beer, it enhances tropical fruit aromas such as passion fruit, guava, and pineapple by acting as an “amplifier” for hop thiols during fermentation. Artist: William Carden-Horton
