It's the fourth incarnation of the legendary experiment by cider maker Tom Oliver, & brewer Jonny Mills. They first got together in 2015, & this latest iteration of their efforts saw the wort (unfermented beer) fermented with Foxwhelp juice & cider lees (active cider yeast) in old oak barrels for 10 months. As always, Foxbic is a true union of traditional cider making & beer brewing techniques. Bottled in 2021 & finished in the bottle. The resulting blend was dry - hopped with whole cone Amarillo. Made using the turbid mash method in the style of traditional Lambic producers.
